It is named after a chapel in the historic fort dedicated to São Tiago – Saint James – the patron saint of the Portuguese army. The chapel has been preserved for picturesque weddings and blessing ceremonies at the breathtaking hotel.
Renovated in 2007, with all the comfort and elegance of a modern boutique 5-star hotel, the Pousada de São Tiago is also renowned for its signature Spanish restaurant, La Paloma.
Overlooking Macau's Inner Harbour along the scenic, tree-lined Praia Grande Bay, the hotel is a 5-minute walk from the historic A-Ma Temple and Maritime Museum, 10-minutes by car from the Macau International Ferry Terminal link to Hong Kong, and 20 minutes from Macau International Airport.
Jaume Tàpies, President of Relais & Châteaux, said: "South-East Asia and China are priority destinations in our international development strategy to create a truly global portfolio of small independent establishments which embody the personalised service and fine dining values of Relais & Châteaux."
Jacques-Olivier Chauvin, Director General, said: “Asia offers major growth potential both as a destination for our international guests and as a source market of guests for our association’s members throughout the world.”
Relais & Châteaux is actively seeking to expand into other important Asian markets such as Hong Kong, admitting applicants “upholding the spirit and soul” of its mission to deliver outstanding guest experiences.

BLT STEAK: The American Steakhouse Opens in Hong Kong
(Hong Kong – January 19, 2009) BLT Steak opened its first restaurant in the Asian market, in Hong Kong yesterday. As the name Bistro Laurent Tourondel suggests, Chef Tourondel presents his adaptation of the American Steakhouse, elevating it with his signature style, French training and all-around finesse. The result – the Modern American Steakhouse.BLT is managed by Hong Kong F&B group Dining Concepts at Shop G62, Ground Floor, Ocean Terminal, Tsim Sha Tsui.
Designed by renowned architect, Hernan Zanghellini, BLT Steak integrates traditional elements of a cozy French Bistro with those of urbane culinary culture. With a stunning entrance of limestone, guests are welcomed to a palette of browns, offset by ambient lighting, suggesting comfort and luxury. Dark wood floor, antique brick and wooden walls surround the luxurious banquettes, creating warmth amid modernity.
Chef Tourondel takes the American steakhouse concept to a new level by artfully combining the highest quality ingredients with the precision of an internationally-renowned chef. “I created BLT Steak as a modern steakhouse – one that focuses on the best product and the most exact techniques. That is the key for me, to keep it simple and wonderful.”
The French inflections in Tourondel’s signature style can be seen in his preparation of the Tuna Tartare with Avocado and Soy-Lime dressing and when he tops giant popovers with bubbling Gruyère. The American flair emerges as he presents his version of steakhouse favorites nestled in petite cast-iron pans, such as Creamy Spinach, Onion Rings and Jalepeno Mashed Potato. The specialty steaks are the finest available USDA Prime, Certified Black Angus and Australian, naturally aged for maximum tenderness and flavored before broiling over a state-of-the-art charcoal broiler and finished with herb butter. Exemplifying the chef’s classic French training, dishes are complemented by a choice of sauces such as peppercorn, maitre d’ butter, horseradish and Béarnaise.
BLT also offers non steak mains including 7 Spiced Duck Breast with Foie Gras, Crispy Red Snapper “Cantonese Style”, and Grilled Spiny Lobster with Ginger Scallion Broth.
Dessert ends the meal with signature interpretations of classic American and French desserts such as Crêpe Soufflé with Passion Fruit Sauce, Peanut Butter Chocolate Parfait and Cassis lemon Meringue Pie with lemon Sorbet.
Drinks include a creative selection of wines including dessert wines, many available by the glass, and signature cocktails.
Located at Ocean Terminal right on the water’s edge, BLT Steak boasts unrivalled views of Hong Kong and is the perfect vantage point to enjoy the biggest display of the year; the Lunar New Year fireworks (27 January, 8pm). Tucker’s Point Hotel & Spa Opens in Bermuda on April 1

Tucker’s Point Hotel & Spa will open on April 1 as the capstone of Tucker’s Point Club, Bermuda’s premier resort, private club and residential community, and as the Island’s first resort in 37 years, its spring debut will mark a renaissance of Bermuda tourism. At the same time, the Hotel will evoke all the charm of Bermuda’s halcyon days – a time when Pan Am Clippers, private yachts, and horse drawn carriages were the preferred modes of transportation, when private launches ferried guests from steamships anchored in St. Georges Harbour to the hotel dock on Castle Harbour - a time when guests did not check-in, rather, they arrived.
Now, Bermuda is only two hours from most gateway cities, and Tucker’s Point is only ten minutes from the International Airport. For discerning travelers who wish to be amongst the first to experience the world-class amenities of Tucker’s Point Hotel & Spa, a special introductory rate of $500* per room, per night is offered through April 30, 2009 and a series of high-value packages will be offered through August 31, 2009. Reservations are now being accepted toll-free at 866-604-3764, online at www.tuckerspoint.com, and by travel agent.
“For all who have dedicated so much time and talent to bring our vision for Tucker’s Point Hotel & Spa to fruition, this is truly an exciting time,” said Eric Brooks, chief operating officer of Tucker’s Point Club. “Spring is a season for new beginnings, and we look forward to sharing ours with the people of Bermuda and a new generation of travelers to this charming and sophisticated island.”
The Hotel is anchored by a stately Manor House, dramatically perched above Castle Harbour, a 17th Century anchorage guarded by the ‘Castle’ islands. Each of the 88 guestrooms and suites is decorated in a classic British style of refined finishes, distinctive artwork and bespoke furnishings. The richly appointed five-fixture bathrooms feature deep soaking tubs, and expansive balconies and terraces provide commanding water views. Suites have wet bars with ice makers, and most have fireplaces. The modern amenities of complimentary Wi-fi, VOIP telephony, and IP-TV are softened by the whimsy of walking sticks, butterfly nets and straw sunhats.
The Palm Court, defined by an alleé of stately Palms, leads from the Croquet Lawn to a dramatic horizon pool overlooking a lush grotto and the waters of Harrington Sound. The Spa features 10 tranquil treatment rooms, and a SilverTag® hydrotherapy suite encourages total relaxation prior to any of the exquisite treatments. The woman’s salon offers manicure, pedicure, and styling with products by Germaine-de-Capuccini; and the barber shop has the Italian brand Hommage. Post-treatment relaxation may be taken around the spa’s reflecting pool under ruffled umbrellas and majestic Palms, or ladies and gentlemen may each retire to their own lounge with a raised-hearth fireplace, and a private courtyard opening onto a garden sanctuary, complete with a Yoga and Tai Chi lawn.
A 1,900 square-foot Fitness Centre provides the latest aerobic and cardiovascular equipment from Life Fitness and Tough Stuff, as well as private wellness and conditioning instruction. Kayaks, motorboats, sailboats, windsurfers, and scuba instruction are available through The Dive Shop and Watersports Centre. Dive adventures aboard the 31-foot Tidal Pull lead to shipwrecks, underwater caves, and the world’s northern-most coral reef.
The Point Restaurant, entered through an English long bar overlooking the Palm Court, is overseen by Chef Serge Bottelli and decorated with the treasured murals of Gerard Henderson. The Point Terrace has twin outdoor fireplaces, perfect for after-dinner cocktails. Private dining is offered in the Wine Room with its barrel-vaulted ceiling, fireplace, and a collection of new- and old-world wines. Al fresco dining, under a pergola draped with bougainvillea and lit by candle lanterns, is available poolside on the Mahogany Terrace. Morning coffee, afternoon tea and evening cocktails are served in the Library, a jewel-box of Cedar paneling with stunning views of the Castle Islands.
The 5,000 square-foot Conference Centre is designed for board of director meetings, senior management retreats, and top-tier incentive programs. A business centre provides computers, translation, IT support, and secretarial services. State-of-the-art technology puts a complete array of audiovisual, lighting and climate controls at the presenter’s fingertips, as well as provides satellite conferencing and complete projection screen options. A conference can even take to sea aboard The Venetian, a 100-foot yacht with cocktail receptions for 50 guests and seated dinners for 25. Brooks explains, “It is rare that a boutique hotel, exquisitely designed to five-star standards, offers a sophisticated conference venue; however, with Bermuda’s established international business community, and the Island’s proximity to major gateway cities, the market for executive meetings is at our doorstep.”
Guests of the Hotel are invited to enjoy all of the dining and recreational amenities of the private Tucker’s Point Golf Beach & Tennis Club. Golf is played on the Roger Rulewich-designed, 18-hole championship course, beautifully sited along Castle Harbour and Harrington Sound. The manicured fairways are superbly contoured, and TifEagle greens provide a fast yet true putting surface. The practice facility comprises a driving range and putting green, and lessons are offered under the direction of PGA-certified golf professionals.
The Clubhouse reflects traditional Bermuda architecture, and offers a complete Pro Shop, beautifully appointed locker rooms, and dining in the Grille Room which opens onto a sweeping verandah overlooking Castle Harbour. There are four lighted Har-Tru tennis courts, and professional instruction by the club professional.
The Beach Club at Tucker’s Point comes alive each April with two freshwater horizon pools, bar pavilion, a restaurant that opens to gentle ocean breezes, and al fresco dining under a shaded pergola. The pools and dining are perched above Bermuda’s most private and pristine pink-sand beach.
The Tucker’s Point Hotel & Spa vision is brought to life by an accomplished team of architects and designers, including the design firm of HKS Architects, in collaboration with Bermuda-based Conyers & Associates, interior designers Paul Duesing Partners, and the landscape design firm SWA Group. Guiding the vision from its inception has been Edward S. Trippe, president, who explains, “Creation of Tucker’s Point Club, now capped by the Hotel & Spa, has been a patient assemblage of all the components that make a great resort. The Golf Beach & Tennis Club and the residential development give Tucker’s Point a sense of place and vitality. The Hotel will bring guests from around the world, and will support new amenities, such as the Spa and the Fitness Centre. It will certainly add to our well-established culinary reputation. Best of all, we have assembled a warm and personable staff that will give the resort its heart.”

Gran Melia Colon Reopening

Sol Melia, one of the world's leading hotel brands and the number-one hotel company in Spain, announces the re-opening of the Gran Melia Colon hotel. Located in Seville's old quarter and considered part of the city's architectural heritage, the hotel will officially open on February 3, 2009, coinciding with the 80th anniversary of the original opening of the majestic Colon hotel. Preserving the integrity of the structure and facade of the original hotel, which was built in 1929, the building has been carefully restored and is an exceptional example of early 20th-century neo-baroque architecture.
Guy Hensley, Senior Vice President of Operations for Sol Melia's Premium Portfolio division, notes, "Following the success of the Gran Melia Palacio de Isora in Tenerife, we are thrilled to restore this historic and beloved hotel to a renewed grandeur. We are delighted with the way the design team has handled this ambitious project, giving guests the opportunity to enjoy the city in a new and thought-provoking way, allowing them to experience the charm of the past, the pleasure of the present and the promise of discovery."
The renovation's design team, led by Alvaro Sans, Sol Melia's key architect, worked in tandem with interior designer, Chus Manzanares. The hotel's 189 rooms have been transformed by the team's innovative design concepts, making each space a work of art. As an important building in Seville's old quarter, and historically known as a favorite hotel for bullfighters visiting Seville, the importance of tradition, history and culture was a priority for the team, playing an influential role in the design of the interior. With a focus on the Spanish Baroque, the hotels corridors are museum-like and designed to be enjoyed at leisure. In addition to an impressive modern art collection, the door to each suite is a painted replica of a masterpiece by one Spain's most celebrated artists -- including Goya, Murillo, El Greco and Velazquez -- complete with lighting, a frame and a description, attributing the piece.
The Gran Melia Colon's lobby is open and airy -- featuring a less formal reception area, modern dome and dramatic railing -- and decorated with Damascus flowers, which appear in the design of the rugs and on the lacquered walls, in the Andalusian tradition of flower-filled foyers. Balancing old world details with the modern, Sans and Manzanares have filled the space with innovative furniture by Philippe Stark and Marcel Wanders. And, promising to be an all around sensational experience, guests will be teased by the alluring smells of "Burladero, Tapas & Tintos by Dani Garcia," and by a menu of international cocktails and snacks at the Lobby Bar where white, resin bull heads adorn the walls as a tribute to Spain's world-renowned bullfighters.
Refined taste and clean lines combine with 21st-century luxury in every service offered at the hotel. Each room is fitted with automatic lighting and curtains, which can be triggered upon entrance, while round-the-clock services -- including baby-sitting service, superior room service, personal wake-up calls, and iPod, Playstation and Wii loans -- ensure guests' comfort and relaxation. In a promise to ensure that each guest's stay is not just enjoyable, but exceptionally different, the Gran Melia provides the highest quality bedding, down pillows and comforters, and amenities from Clarins. A media hub is provided in every room, which includes computer and internet connections, an interactive 32-inch plasma television, iPod hook-up, mobile battery charger, and more. All rooms are also equipped with Wi-Fi internet and a radio-alarm clock.
For truly personalized service, Gran Melia hotels offer the "RedLevel." With 43 luxury rooms, spread out across the seven floors, guests of the Red Level are welcomed by a personal concierge and private butler. Perks for RedLevel guests include VIP treatment when dining at the hotel or at the Spa, in-room Nespresso coffee machines, complimentary aroma-therapy products, private check-in, and access to the RedLevel Living Room, an intimate lounge. A step up from the RedLevel in luxury is Gran Melia Colon's "The Clothed Maja", a Penthouse Master Suite located on the hotel's seventh floor. The suite is more than 90 square meters and opens onto a spectacular 140 square meter terrace, designed with superior luxury and exclusivity in mind, and featuring a hydro-massage bath and a Balinese bed. Guests of "The Clothed Maja" suite also have the option of reserving an adjoining suite, with separate entrances, for an extended entourage.
Coinciding with the restaurant's 50th anniversary, the Gran Melia Colon introduces a new menu at the famed "El Burladero," which re-opens after its brief closure for renovation as "Burladero, Tapas & Tintos by Dani Garcia". Dani Garcia, known for his artful blend of traditional taste and modern presentation, has designed a menu which highlights Spanish cuisine deeply rooted in Andalusian tradition with an international atmosphere. Dishes like pescaito frito, croquets, savoury gazpachos, cherry gazpachos and foie gras are featured on a menu which offers both sweet and savoury tapas and prove to be a delicious, new take on an age old tradition.
Chef Dani García states, "El Burladero has always been a landmark restaurant in Seville; it has historically been a place where people gather to share thoughts and sentiments, and spend time with beloved family and friends. Tapas are more than a meal; they are a way of enjoying life and an art in Spain. It will be both a privilege and a challenge to lead a restaurant with such a longstanding tradition. I am greatly looking forward to welcoming my fellow Andalusians and international friends back to the Burladero."
For breakfast, the ground floor also offers an a la carte buffet near the lobby, which boasts an international menu and becomes an a la carte restaurant after breakfast. For light fare, the Lobby Bar is an enticing option, and for the cigar enthusiast, the Cigar Bar is an ideal place to enjoy a superb cigar in a luxurious environment.
Guests are invited to wind down and enjoy the hotel's "Wellness Spa", designed to cleanse the body, relax the mind and purify the soul. Complete with sauna, Turkish bath and a myriad of massage facilities, the Spa is home to relaxation, mediation and release from modern day pressure. Guests will also appreciate the upscale seventh floor Fitness Centre and Solarium Terrace, complete with hydro-massage swimming pool, delightful Balinese beds and incomparable views of the city.
The Gran Melia Colon boasts eight meeting rooms, which can welcome up to 220 people, and a business centre service with high-speed internet connection, computers and scanners. All meeting rooms are equipped with all the latest technology.
The Gran Melia Colon lies in the heart of the city, within a short walk of the main historical sites, such as the cathedral, the Giralda, the Reales Alcazares and, of course, the famous bull fighting ring, the Real Maestranza. It is also close to Sierpes and Tetuan streets, known for being one of the main shopping and commercial quarters of Seville, where guests will have a wealth of opportunity to try the local food and drinks.

Considered the first Las Vegas celebrity chef, Andre Rochat has enhanced his AAA Four Diamond restaurant by combining its original old-world charm with a modern twist to create a warm, welcoming atmosphere.
“Andre’s exemplary reputation has earned him a very loyal following and a deep respect from others in the culinary industry,” said Anton Nikodemus, president and COO of Monte Carlo. “We are proud to have Andre and his team as part of the Monte Carlo family, and I know his customers will enjoy the new restaurant experience.”
The new layout of Andre’s, designed by Urbane Design Associates, is evident upon arrival. Floor-to-ceiling clear glass entrance doors allow a glimpse into the visually open and expanded wine bar. Accented with gold and blue mosaic tiles, silk-wrapped lighting, metal barstools with blue cowhide and four large glass bottle sculptures by local artist Tony Milici, the bar provides a beautiful backdrop to enjoy a menu of small plates, artisanal cheeses and charcuterie before proceeding to the dining room. To complement the bar menu, wine flights and unique cognac flights are available to sample old favorites or possibly discover new ones from Andre’s award-winning, 12,000-bottle cellar.
Honored by the prestigious Best of Award of Excellence from Wine Spectator, Andre’s Restaurant & Lounge boasts a wine list with more than 1,500 selections. The list features legendary vintages from the most exalted châteaux of Bordeaux, Burgundy, as well as top New World, Italian and Spanish labels.
Turquoise blue, the design firm’s version of the traditional “French blue,” is set against pearly white and grey walls throughout the restaurant and complemented by colorful contemporary artwork. Touches of glamour and sparkle are created with antiqued mirrors and whimsical, silver chandelier-inspired sconces. In the dining room, romantic candlelit tables, dressed in white linen, fine sterling silver, Raynaud Limoges china by Alberto Pinto and delicate stemware complete the setting.
Upstairs, guests will discover three private dining rooms as well as the intimate Cigar Lounge, recognized in 2008 by Santé as “Outstanding Restaurant Bar.” The Lounge offers one of the widest selections of Cognacs, Armagnacs and after-dinner drinks in North America. For an added experience, Cognacs and cigars can be professionally paired.
Locals, devoted clientele and food lovers alike will be pleased to know the daily culinary operations are being managed by Chef de Cuisine Greg Engelhardt, a veteran of the recently closed Andre’s in downtown Las Vegas. Engelhardt’s driving passion to create contemporary interpretations of “Andre’s Classics” earned the downtown restaurant a one star rating from the prestigious Michelin Travel Guide.
The menu features traditional French cuisine overseen nightly by Chef Rochat, who gives his personal stamp of approval to each plate before it leaves the kitchen. Guests can indulge in Andre’s signature menu items, including Rack of Colorado Lamb with eggplant parmesan and gratin dauphinois; Filet of Beef au Poivre Vert with green peppercorn cream sauce and jumbo asparagus hollandaise and Live Maine Lobster Thermidor.
Chef Rochat said, “I am very excited about the transformation Andre’s Restaurant & Lounge has made at Monte Carlo. There have been many culinary changes in Las Vegas, and while the clientele is always looking for a new and exciting experience, our guests also are looking for great food, superior service and a good value. We deliver it all!”
Andre’s Restaurant & Lounge at Monte Carlo is open daily from 5:30 p.m. to 10 p.m. Reservations are recommended but not required.

Six Senses to Open Spa in Jordan

JANUARY 15, 2009 - Six Senses is preparing to open the Evason Ma’In Hot Springs & Six Senses Spa. In an extraordinary and rugged location in Jordan, the new property is just minutes from the Dead Sea and a one-hour drive west of the capital of Amman.
Sitting in a rocky ravine 264 metres below sea level, the resort features hot mineral spring waterfalls. Legend has it that Herod the Great bathed in the waters, and the therapudic benefits of the hot springs, has continued to lure visitors over the centuries.
Today, visitors from around the world mingle with regular patrons to the hot springs and thermal pools, with the Evason Ma’In entrusted as custodian of the public portion, whilst retaining the therapeutic falls at the resort and the Six Senses Spa for the exclusive enjoyment of its guests.
Originally constructed in the 1980’s, the main resort building has completed a twelve million dollar make-over to convert it to an Evason. This includes a new free-standing Six Senses Spa complex that will focus on the properties of the mineral-rich waters, offering Healing Mineral and Dead Sea therapies such as salt scrubs and the famed mud wraps. The spa will also feature an a la carte menu of Six Senses signature treatments including the renowned Sensory Journey.
The purpose-built Six Senses Spa complex, with its own thermal waterfall and pool, has been chosen as the best environment friendly architectural project in a competition organized by the Jordanian Association of Engineers. The award recognized the great effort contributed to the project by the Jordanian firm of DARB Architects & Engineers.
The reconfigured accommodations offer ninety-seven deluxe guestrooms and suites, including two Royal Suites. Several suites feature personal spa facilities. Décor reflects the Evason concept of fresh and colourful furnishings focusing on the use of natural and environmentally friendly materials.
- Story continues below -
Dining and refreshment outlets include a Chef’s Table – a concept proving overwhelmingly popular in many Six Senses properties, and a traditional Jordanian tray-restaurant with plump cushions upon carpeted floors.
The Wine Cellar offers regular degustation dinners and tastings. A Brown Bar and a White Bar have been created, with a feature being an impressive array of local olives and olive specialties including fresh-pressed oils. Alfresco dining beside the newly installed swimming pool overlooks the hot spring waterfalls. Wood-fired oven specialties and a pizza bar are featured.
Each evening, as another glorious Jordanian day turns to twilight and the sun slips behind the Dead Sea, the place to be is on the terrace, from which vantage point the lights of Jerusalem glow in the distance and a myriad stars twinkle overhead.
The LIFE (Learning-Innovative-Fun-Experiences) hosts at Evason Ma’In offer an array of fascinating excursions, most of which are day-trips. These include visits to the Dead Sea and the historic mosaic city of Madaba. An Amman city tour is a must, with its colours, smells, exotic tastes and ancient ruins. Overnight trips include the Bedouin Experience in awe-inspiring Wadi Rum and the glorious city of Petra – carved into the mountainside.
With its first opening on February 14, 2009 and a grand opening scheduled for April 2009, the total make-over of Evason Ma’In Hot Springs & Six Senses Spa has been under the direction of the Six Senses Creative team in collaboration with the leaseholder of the property, Ma’In Jordan Spa Company.

Scheduled to open in 2010 Coworth Park will be the ninth in the Collection. Fifteen acres of willow, with a 3 year growth cycle will ensure that the hotel is able to produce its own carbon neutral fuel supply. Additionally, cooling for the hotel will be provided by a ground source water circulation system of underground pipes known as 'slinkys' within the hotel grounds.
Dorchester Collection has ambitious plans for growth and recently announced the addition of two new hotels in New York and Los Angeles. Commenting on this new hotel, Christopher Cowdray, CEO of Dorchester Collection, says, 'All our hotels have their own style of individuality and this new hotel will be no exception. We are targeting 15 hotels in key North American and European cities in the next 5-10 years and we are delighted to be able to strengthen our UK portfolio with the addition of a country house hotel so close to the centre of London.'

Hotel Claude, New ARTEH Hotel in Spain
The Hotel Claude, located in Andalusia in the lively and colourful Old City of Marbella, Spain, is now an ARTEH Hotel.
The narrow white streets of the colourful and lively Old City of Marbella lead us to Hotel Claude, a luxurious and private refuge that will charm you with its style, good taste and exclusive service.
Its building has a history that connects it to 17th century culture and its name was chosen in honour of Claude Devoize who, after a successful career in opera, bought it to create an artist's club, but then ended up by turning it into her private residence.
The hotel underwent three years of refurbishment which rejuvenated the attractive façade. The detailed decoration, by the famous designer Angell Gordon, provides a refined environment with its warm colours, quality fabrics and natural materials such as the terracotta floors or the sandstone bathrooms.
Each room has its own personality and was decorated with exclusively designed furniture. Styles and materials from different eras were combined reflecting the hotel's and Andalusia's rich history, and offering the best contemporary luxury.
The small restaurant 'Le Bijou' really is a gastronomic jewel that is offered to us by chef Tell Wagner, holder of a Michelin star, who idealizes monthly menus with the freshest products, contributing perfectly for your memorable stay at the Hotel Claude
