COMO Shambhala Estate, Bali, Wins Another Accolade in Annual SpaAsia Crystal Awards

(Hong Kong, November 28, 2008) – COMO Shambhala Estate in Bali has been awarded ‘Best Complementary and Alternative Medicine Centre’ in this year’s SpaAsia Crystal Awards (2008) announced on 16th October in Kuala Lumpur, Malaysia.

The awards are the highlight of the SpaAsia Wellness Summit, an annual event to honour the crème de la crème of the wellness community. A total of 150 applicants vied for recognition in 17 categories.

The former banker and helicopter pilot, turned light designer is well know for his conversion of buildings, monuments and even mountains into temporary art objects through the use of projected light. Dolder Grand's Michelin Chef Flying High Aboard SWISS Airlines

Heiko Nieder cuisine served in national carrier's first and business class

(Hong Kong, November 28, 2008) – Heiko Nieder, the Michelin-star head chef fine dining at Zurich’s iconic ‘city resort’ the Dolder Grand, is flying high creating gourmet menus for SWISS Airlines.

His award-winning cuisine will be delighting passengers in first and business class aboard the national carrier from November 26 to February 24.

He is 'chef fine dining' at The Restaurant, the resort's signature restaurant, where he is renowned for innovative and experimental gourmet cuisine with modern and light dishes.
In 2003, Heiko Nieder earned the title “Discovery of the Year” from GaultMillau for his culinary creations. In 2004, he was awarded a Michelin star and in 2007, 17 GaultMillau points. Again in 2008 The Restaurant at the Dolder Grand was awarded 17 GaultMillau points and a Michelin star.

His airline menu trademark creations include appetiser choices of goose-liver terrine with carrots and coffee and trout with water cress and celery, followed by delicacies which include scallops with cauliflower, ginger and star-anis and spiny lobster with fennel, lychee and vanilla.

The main course is duck with quince, vinegar-prunes and Kartoffelbuchteln; beef with endive, gruyère and fig-coffee or Veal with carrots, black cumin and polenta. The menu is completed with seasoned chocolate with sweet corn ice cream and coriander or frozen apple juice with cardamom, yoghurt and grapeseed oil.

The Dolder Grand is newly re-opened following a four-year facelift, restoring the glory of the original “Curhaus” dating back to 1899. The new luxury city resort was styled by world renowned Foster and Partners, with a new 4,000 sq metre spa and golf wing by Sylvia Sepielli. For inspiration, the designers, United Designers from London, drew on famous guests from the historic past of the Dolder Grand. Hence the Maestro Suite is a tribute to Herbert von Karajan, the Carezza Suite has a sculptural look unmistakably influenced by the work of Alberto Giacometti, the Masina Suite captures the Italian style inspired by film star Giulietta Masina and Suite 100 draws on a 1960s retro look representing the glory years of The Rolling Stones.

Grill favorites are the signatures which include saga wagyu sirloin (HK$580), 20oz t-bone florentine (HK$405), u.s. rib-eye (HK$325), australian baby lamb rack (HK$320), u.s. kurobuta pork chop (HK$285), boston lobster (HK$390 (half) / 590 (whole), devil jumbo prawn (HK$225) and norwegian salmon (HK$285).

Weekend Day Cruises to Stanley Market Now Underway

(Hong Kong – 18 November, 2008) aqualuna, the stunning authentic Chinese junk from aqua restaurant group is pleased to announce its new weekend sailing route from Central to local hot spot Stanley is now underway.

The weekend Stanley cruise departs from Pier 1, Cultural Centre, Tsim Sha Tsui at 12 noon, picking up guests from Hong Kong Island’s cental Pier Number 9 fifteen minutes later before embarking on a relaxed 90 minute sailing to Stanley.

Already renowned for its glamorous evening harbour cruises and infamous red masts, the new route is aqualuna’s first outside of the Hong Kong harbour.

Originally only planned for Saturdays, the group has added Sunday sailings due to popular demand and it is certain to become the most stylish form of transport to Stanley for brunches, lunches or shopping with friends and visitors!

Arriving at Blake Pier at 1:45pm guests can step into Stanley’s colourful market and find bargains galore, lunch at one of the many the street-side cafes, visit the Tin Hau Temple or sightsee at any one of a number of historical sights before boarding aqualuna at 3:30pm to leisurely head back to Central.

The fabulous new day cruises will be priced at $190 one way and $290 for a round trip journey, including one beverage each way.

As well as enjoying the sights of Victoria Harbour and panoramic 360 degree skyline, guests will see the beautiful coastline of the island as the boat navigates its way south. THE MIELE GUIDE REVEALS THE FIRST-EVER RANKED LIST OF ASIA’S TOP 20 RESTAURANTS

(Singapore — 3 November, 2008) — As part of the launch of the inaugural edition of The Miele Guide, the much anticipated first-ever ranked list of Asia’s Top 20 Restaurants was announced at The Miele Guide Dinner on October 31, 2008. The exclusive red carpet event, held at the Grand Hyatt Singapore, was attended by approximately 350 guests, comprising of a veritable who’s who of Asia’s F&B scene. At this extraordinary gathering of Asia's most celebrated chefs and restaurateurs plus regional and international food critics and journalists, the Top 20 Restaurants and the personalities behind them received The Miele Guide awards and most importantly, the recognition that they so richly deserve.

This year, Hong Kong has emerged as the best city in Asia to dine in. Eight restaurants in The Miele Guide’s Top 20 are in Hong Kong. It is also worth noting that one chef-restaurateur has three restaurants in The Miele Guide’s Top 20. Joel Robuchon, once heralded as the world’s greatest chef, is undoubtedly helping to transform Asia’s culinary scene through his restaurants in Hong Kong, Macau and Tokyo.

Taking the top honours this year is Iggy’s, a four-year-old restaurant in Singapore that has consistently received rave reviews both locally and internationally since it opened. Iggy’s has also been consistently ranked among the world’s best restaurants by other media and surveys. Of note is Filippino chef-restaurateur Antonio Escalante. His restaurant, Antonio’s Fine Dining, is Asia’s 10th best restaurant this year and the only restaurant in the Philippines to break the Top 20.

To determine the Top 20, The Miele Guide conducted four rigorous rounds of selection and judging. The selection process started with the creation of an initial shortlist of “Asia’s best restaurants” by a panel of 84 of the most respected restaurant critics and food writers from over 16 countries in Asia. Then, over 10 weeks, over 15,000 registered voters, from over 40 countries, cast over 75,000 votes for the restaurants they believe are Asia’s best via an online survey, hosted at www.mieleguide.com. Each voter was allowed 10 votes, only 3 of which could be cast for restaurants in their own country (if they live in one of the 16 countries being evaluated in the 2008/2009 edition). In addition, a group of 1,500 foodies, F&B professionals and journalists were invited to form a special jury and cast votes for their picks, separately from the public. The results of these two votes were combined with slightly more weight given to the public vote.

Over 2,000 restaurants received votes in these two rounds. From this, The Miele Guide selected the top 320 ranked restaurants for inclusion in the 2008/2009 edition. To further evaluate and confirm the rankings of Asia’s Top 20, incognito tasting at the top 25 ranked restaurants were conducted by The Miele Guide team, with help from contributors in selected countries.

This year, restaurants in 16 Asian countries were evaluated—Brunei, Cambodia, China (including Hong Kong and Macau), India, Indonesia, Japan, Korea, Laos, Malaysia, Myanmar, Philippines, Singapore, Sri Lanka, Taiwan, Thailand and Vietnam.

“We expect that this list will be controversial,” says Aun Koh, Director of Ate Media. “Like any list, we expect people to dispute the rankings and to criticize us. But the more people talk about our Top 20 list, the better. The overarching goal of The Miele Guide is to help the restaurant industry in Asia grow. The more people talk about and debate which restaurants and chefs they think are Asia’s best, the closer we are to achieving our objectives of helping our most talented chefs and restaurateurs gain more recognition, both within Asia and internationally. Obviously, we want The Miele Guide to become established as the most credible, independent and respected system through which restaurants are evaluated across Asia. But a large percentage of our results are based on polling, both through a jury and the public. If people are unhappy with the results this year, we urge them to vote in the following years.”

MORTON’S OF CHICAGO, HONG KONG & MACAU INTRODUCE NEW PRIVATE DINING MENUS

(Hong Kong– November 3, 2007) – Morton’s of Chicago has introduced new set lunch and dinner menus for group bookings in the private dining room and new menu items for a la carte dining.

The three new three-course set lunch menus for day time dining range in price from HK$595 / MOP$626 per guest to HK$695 / MOP$725 per guest and feature a selection of Morton’s classic dishes. The four new three and four course set dinner menus range in price from HK$775 / MOP$825 per guest to HK$1,175 / MOP$1,195 per guest.

At HK$595 / MOP$625, the set lunch is Sliced Prime Rib of Beef with whipped horseradish sauce, served with sautéed garlic green beans and a choice of herb-roast red potatoes or mashed potato. The menu also includes a Caesar Salad starter and dessert of New York Cheesecake.

Priced at HK$650 / MOP$685, a second option features a choice of two main courses, Single Cut Filet Mignon with bearnaise sauce or Broiled Salmon Fillet with white wine butter sauce, served with steamed fresh broccoli, hollandaise and garlic mashed potato.

The third set lunch menu choice priced at HK$695 / MOP$725 offers three main course choices, with an option of lightly-breaded Chicken Christopher with garlic beurre blanc sauce, as well as Single Cut Filet Mignon or broiled salmon fillet, served with fresh asparagus, hollandaise and twice-baked potato.

Starter of mixed field greens salad includes toasted walnuts, apples and blue cheese, with dijon vinaigrette. Dessert is an indulgent ‘trio’ of New York Cheesecake, Chocolate Velvet Petit Fours, and chocolate cup filled with fresh seasonal berries and sabayon sauce.

Moving into the evening, the Bronze Dinner Menu priced at HK$775 / MOP$825 per guest offers a choice of either Caesar Salad with classic dressing, Morton’s Salad with Morton’s blue cheese dressing, chopped egg and anchovies or Mixed Field Greens Salad to start.

Entrée options include two from the following classic dishes of Single Cut Filet Mignon, Broiled Salmon Fillet or Chicken Christopher served with a selection of two accompaniments from Sauteed Garlic Green Beans, Steamed Fresh Broccoli, Mashed or Baked Potato served on the side. Desserts choices include New York Cheesecake, Double Chocolate Mousse or Key Lime Pie.

The subsequent Silver Dinner Menu at HK$850 / MOP$900 per guest and Gold Dinner Menu HK$1,050 / MOP$1,110 per guest offering a wider selection of Morton’s favourite dishes make way for the Platinum Dinner Menu priced at HK$1,175 / MOP$1,195 per guest.

The Platinum Dinner Menu starts with a choice of four Hors d’Oeuvres served butler style from a selection of Broiled Sea Scallops wrapped in Bacon, Colossal Shrimp Cocktail, Petite Lamb hops, Miniature Crab Cakes and Lobster Bisque. The menu is followed with a selection of salads to choose from including Mixed Field Greens Salad with Dijon Vinaigrette Dressing, Blue Cheese Crumbles with Sliced Apples and Walnuts, Caesar Salad with Classic Dressing, Sliced Beefsteak Tomato with Purple Onion, Vinaigrette or Morton’s Blue Cheese Dressing or Morton’s Salad with Morton’s Blue Cheese Dressing, Chopped Egg and Anchovies.

Entrees include a choice of three from USDA Prime New York Strip Steak, USDA Prime Ribeye Steak, Double Cut Filet Mignon, Broiled Salmon Filet, Sesame Encrusted Yellowfin Tuna, Colossal Shrimp Alexander, Jumbo Lump Crab Cakes, Chicken Christopher or Domestic Double Rib Lamb Chops. All entrees are served with a choice of two accompaniments from Sautéed Garlic Green Beans, Steamed Fresh Broccoli, Steamed Fresh Asparagus, Mashed Potato, Baked Potato or Twice Baked Potato.

Dessert completes the Platinum Dinner Menu with choices including New York Cheesecake, Chocolate Velvet Petit Four and Chocolate Cup filled with Fresh Seasonal Berries and Sabayon.
